Tonight we made a basic meal – our staple frozen TJ’s fish (mahimahi this time) cooked with garlic, white wine & butter; sauteed spinach with garlic, and the piece de resistance was some home made pesto sauce and pasta.

Noah seemed to really like the pesto, it was very good and had an excellent lemon flavor to it, but I think I just don’t get too excited about pesto.

But, as for how to make the sauce I combined the following ingredients into our food processor, and voila – pesto!

Pesto Sauce:

1 cup basil leaves
1.5 cups arugula
1/2 cup toasted walnuts
3/4 tsp salt
1/2 tsp pepper
1/2 cup grated parmesan
3.5 tbsp olive oil
4 cloves garlic
1 zest of a lemon
1 lemon, juiced
